A good way to incorporate sweet red peppers into your daily diet is by making a big batch of healthy soup! It’s so quick and easy, and makes for a filling satisfying and low fat meal.
This recipe uses fabulously healthy red peppers, which contain more than 200 % of your daily vitamin C requirement. Vitamin C is great for helping ward off colds. This recipe is also full of antioxidants, that can help boost immunity. Red peppers can also help you absorb iron and contains vitamin B6 and folic.
This recipe is great for increasing your onion intake. Onions are described as one of nature’s super foods as they contains polyphenols which can help boost the body’s immunity to certain unwanted health conditions.
HEALTHY RED PEPPER SOUP RECIPE – SERVES 4
225g/8 oz red peppers, deseeded and sliced
1 onion, sliced
2 garlic cloves, crushed
1 fresh green chilly, deseeded and chopped
300 ml/10 fl oz passata
600 ml/1 pint vegetable stock
2 tbsp chopped fresh basil
4 fresh basil sprigs, to garnish
- Put the red peppers into a large pan with the chopped onion, garlic and chilli. Add the passata and stock, then bring to the boil over a medium heat, stirring constantly.
- Reduce the heat to low and simmer for 20 minutes or until the peppers have softened. Drain, reserving the liquid and vegetable separately.
- Rub the vegetables through a sieve with the back of a spoon. Alternatively, put into a food processor or alternatively use a hand blender and process until smooth.
- Return the purée to a clean pan and add the reserved cooking liquid. Add the chopped basil and heat until hot. Transfer to 4 bowls and garnish with fresh basil sprigs.
